Questions, answered

What is a gaiwan used for?

A gaiwan is a lidded bowl for brewing loose leaf tea. You steep in it and pour the liquor off through the gap under the lid, which lets you brew the same leaves many times with short, controlled infusions.

Is 120 ml a good size?

Yes — 120 ml is the standard gongfu size. Large enough to serve two or three small cups per infusion, small enough to keep the leaf-to-water ratio concentrated.

How much tea do I use in a 120 ml gaiwan?

About 4–5 g of loose leaf, or roughly one third of the bowl for tightly rolled or compressed teas.

Will it hold onto flavour from strong teas?

No. Glazed ceramic is non-porous and neutral, so the same gaiwan works for green, oolong, black and pu-erh without carry-over. Unglazed clay pots do absorb flavour; a glazed gaiwan does not.

Can I put it in the dishwasher?

No. Hand wash with warm water only, no soap.
